Little Finger Carrots

Growing Instructions
Carrots prefer cool weather. For spring crops, direct sow seeds in the garden 2-3 weeks before the last average frost date. For fall crops, direct sow seeds 10-12 weeks before the first average frost date. Finely till the soil to a depth of 12” and remove any debris. Mix in several inches of compost and well-rotted manure.
Sow seeds after soil reaches 40°F. Plant seeds 1/8-1/4” deep and cover with fine soil. Keep soil moist. Seeds germinate best when soil temperatures are 55-65°F, and do not exceed 75°F. Temperatures exceeding 80°F will reduce the germination rate and result in slow growth and bitter taste. Seeds can tolerate temperatures as low as 32°F. Sow seeds every 2-3 weeks for a continuous harvest through mid-summer and again in early fall.
Thin plants when they are 1” tall. Use scissors to avoid disturbing the roots. Apply mulch around the base of the plants to help conserve moisture and suppress weeds. Fertilize 4 weeks after sowing with low nitrogen fertilizer, as too much nitrogen promotes foliage growth instead of root development. Roots will begin to push out of the ground when carrots are ready to harvest.
Water lightly before harvesting. Gently wiggly the carrots to loosen them from the soil. Then, pull straight up to avoid damaging the roots. Carrots can be stored in a refrigerator crisper drawer for up to a week. They will store for several months covered in sand and placed in a root cellar or basement. Carrots can also be dried or frozen.
